Taco Stuffed Shells

  • 1 lb ground beef
  • 1 (1 1/4 ounce) package taco seasoning (can use low-sodium)
  • 1 (4 ounce) package cream cheese
  • 14 -16 large pasta shells
  • 1 cup salsa
  • 1 cup taco sauce (NOT enchilada sauce)
  • 1 cup cheddar cheese, shredded
  • 1 cup monterey jack cheese, shredded
  • 1 1/2 cups tortilla chips, crushed (optional)
  • 3 green onions, chopped
  • 1 cup sour cream


  1. Start by preheating your oven to 350°.

  2. In a frying pan, cook the ground beef. Add the taco seasoning and follow the package directions. Then, add the cream cheese. Cover the pan and let the cheese melt into the meat. Mix everything together until well blended. Set it aside to cool completely.

  3. While the ground beef is cooking, cook the pasta shells according to the package directions. Drain the shells and lay them out on a baking sheet so they don’t stick together.

  4. Pour the salsa onto the bottom of a 9×13 inch baking dish. Now it’s time to stuff our shells. Take each shell and fill it with the meat mixture. Place the shells in the baking dish with the open side facing up. Cover the shells with the taco sauce. Then, cover the dish with foil and bake it in the oven for 30 minutes.

  5. After 30 minutes, remove the foil and sprinkle the shredded cheddar cheese and monterey jack cheese on top of the shells. Pop it back in the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

  6. Once it’s ready, take it out of the oven and garnish with chopped green onions. You can serve it just like that, or add a dollop of sour cream and extra salsa on top for that extra kick of flavor.
