¼ teaspoon salt

1 cup cake flour

12 egg whites, room temperature

1/3 cup warm water

1 teaspoon almond extract

1 ½ teaspoons cream of tartar

4 cups cherries, fresh or thawed if frozen

4 tablespoons cornstarch

2/3 cup sugar

Juice of ½ lemon

1 cup heavy whipping cream

3 tablespoons confectioners’ sugar

Directions:

Preheat Oven: Set your oven to 350°F (175°C).

Prepare Dry Ingredients: Sift together half of the sugar, salt, and cake flour.
